50 Male with sensitivity to gluten, dairy and sugar. Sugar is that harder one since it is in so many foods. I also had my thyroid removed.

About 28 years ago, I got dizzy when I was driving. So I went to the doctor and they performed a glucose tolerance test and diagnosed me with borderline hypoglycemia. I have been able to control this by eating smaller more frequent meals and by always making sure to have a protein to eat so it balances out the carbs. I have had sugar sensitivity for over 20 years, but as I have gotten older, it has gotten worse. Within minutes of eating or drinking sugar, including fruit, my neck and head muscles tighten up and I get a headache. It is better if I eat the sugar at the end of the meal, for example, a dessert. When I wake up in the morning, my head feels swelled and I get good relief from taking ibuprofen. But I don't want to take ibuprofen too much. Any ideas on what this could be? I have heard of Candida overgrowth. Is that a real thing?
